Hey Seth... we just spent a week in Lakehead, on Shasta Lake (the DeGraaff's joined us for much of it). We went there last year too w/ my brother's family. We really like it up there -- low-key, relaxed, friendly setting, feels "farther away" than it is. We actually rented a vacation house (that's my kind of "camping"), but we saw quite a few campgrounds that looked pretty nice, like this one: http://www.antlersrvpark.com/ The huge lake is very warm, with many different access pts (almost all via marina/dock vs. "beach"). There are some motor boats, but the lake is so big they're pretty easy to avoid. We had lots of fun picking wild blackberries, renting a patio boat (and swimming in the lake), visiting a great water park in Redding near by, hanging out on a "beach" at the nearby Sacramento river -- overall a big success. It is still smoky up there but it didn't impact the fun very much.
There are two really great books that I used religiously when I lived in California. They are put out by Foghorn books: both by Tom Stientra and Ann Marie Brown If you tell me some of the places you are thinking of I could probably give you more thoughts. I have been to a lot of places. I just do not know which areas take dogs so I would need more info.
